Chef Franck Putelat serves gastronomic cuisine with signature dishes like Parmentier with Biju de Méditerranée, Cassoulet with pigeon and Morteau sausage, and Bouillabaisse with duck foie gras. A three-course lunch with wine and coffee costs €48. The contemporary restaurant design contrasts with Carcassonne's medieval stones and features a large terrace shaded by sails, a garden with pebbles and lawn, and plate-glass windows.
